Escher has a way of appearing in places - game covers, movies, comics, etc. So I cant say for sure where I first encountered Escher.
I'd like to say an OMNI magazine in the 70s. We can run with that.
I've used Escher style elements in RPG before. That probably comes from Labyrinth.
It was while learning Q3 mapping I realized I could port this famous art to a map:

I have plans to expand that with the quake-hack engine. The map has already been converted to Q1 format.
