Did you noticed some units deal poison when attacking other units? Perhaps you also noticed some deal poison in the very first hit (like spiders or poison arrows) while others need to attack more so they can poison a unit (like snakemen or assassins)? That's all about poison strength. You can see in the unit's description its poison value (if that's one of his abilities). The same mechanism works for fear (compare a Giant to an earth elemental, for instance) or terror (compare a titan to a dragon, for instance).

So a high level of poison means this weapon has a high probability of inflicting poison at first hit, and this poison is strong, lasting longer and it is harder to cure with low level healing spells. More or less the same thing for other physical and psychological afflictions.

A unit's resistance stat also helps protect against poison (and all other psyche effects).
So the higher the resistance stat, the less likely the unit is to get poisoned. But again, the poison's strength will try and counter that.

Just for fun - the Dark Elves' Assassin has the strongest poison in the entire game (both The Protectors and the vanilla game) at a staggering strength 20! (6-8 is seen to be average)
