Since for me VT is quitessentially UT with jets, I prefer to stick with various OSTs from Unreal Tournament series and Quake 3.
My list:
-Menu theme: Unreal Tournament 2004 Menu Theme : Youtube.com
-Intermission theme: Unreal Tournament Menu Theme : Youtube.com
-Plane selection BGM:Front Line Assembly 01 - without the intro (Quake III Arena), aka the 'Civil Protection Machinima Main Theme' : Youtube.com
-Mission 1 BGM: Mechanism 8 (Unreal Tournament) : Youtube.com
-Mission 2 BGM: KR-Rankin (Unreal Tournament 2004) : Youtube.com
-Mission 3 BGM: Strider/Into the Darkness (Unreal Tournament) : Youtube.com
-Mission 4 BGM: Firebr/Fire Breath (Unreal Tournament) : Youtube.com
-Mission 5 BGM: KR-Corrugation-Rise (Unreal Tournament 2004) : Youtube.com
-Mission 6 BGM: Hyperblast Redux (Unreal Tournament 2004) : Youtube.com
-Survival BGM: Saveme (Unreal Tournament) : Youtube.com
-Skirmish BGM: Superfist (Unreal Tournament) : Youtube.com

This might be better in the suggestions thread but I think every music file in the game should have its own text file telling the game how to loop/sequence it. This would be better than putting all the sequencing instructions in a mission's text file because it would make the songs more interchangeable and useable in skirmish mode (where music is randomly selected.) However, if the song has multiple loops, the mission would have control over which loop plays at any given time (skirmish would switch loops as the clock runs down.)

Also it would be possible to store music you don't want the skirmish mode to use in a different directory.

Now for some songs:
Prison Lane (Sonic Adventure 2) Youtube.com
Metal Harbor (Sonic Adventure 2) Youtube.com
Pyramid Cave (Sonic Adventure 2) Youtube.com
Battle Vs Silver (Sonic 06) Youtube.com
Bear Tracks (Ace Combat 2) Youtube.com
Mayhem (Ace Combat 0) Youtube.com
Rendezvous (Ace Combat 5) Youtube.com
Chain Reaction (Ace Combat 5) Youtube.com
Naval Warfare (Ace Combat Assault Horizon) Youtube.com

Now I need a properly done over-AoA/HAWX-style OFF-mode mutator so that I can feel the special immersion of rausing in 3D plane™.

I'd say this fit extremely well for plane selection screen in Ace Combat too

This needs to be hangar theme for the next Ace Combat, if there's any

Ace Combat Zero soundtrack, forever and ever.

Sometimes, it's even Zero itself on a loop.

When I hunt a Zizzy, though, I always turn on Hresvelgr instead.

I'm not sure why but DW7 songs goes well with Ace Combat and whatnots (perhaps because it sounds less oriental than other series?)

One other theme you guys could use for the helicopter missions and/or challenges...

The ending theme of Carrier Air Wing/US NAVY is one I'd use for a landing theme after beating the final mission.

Since there seem to be a lot of nukes in VT universe those should fit:
