Can I use the older release skins with the current version of VT? Also, how do I add the pilot model to the Su-30SM add-on?

Yes, you can.
The pilot mode position is determined in plane's ini file. You can copy the position from Su-30MKI.
Also, Su-30SM and Su-30M2 are being re-vamped to match VTRP standards and will be released sometime this year.
