These are really minor props and they'll only be used in a dark environment. I need to speed up my workflow so I didn't spend a lot of time on these, but Aaron insisted on showing them off. The cart is meant to be pushed by hand so it's supposed to be quite small.
you can't really judge the height of the planks from this screenshot(unless you meant the planks on the cart?). And either way, these will be used in a dark environment so you won't be able to see that much of the textures anyway.

I'd love to do some videos for my future assets, if the project leader is okay with that.
for a cylindrical object like this start with a cylinder and do a cylindrical unwrap, or blender's equivalent of that, and edit your geometry after you've done the unwrap. It's easier to it this way, because if you have complex geometry it will be difficult to get a nice straight unwrap. However in max there are tools to manually straighten your uvs that work quite well, I don't know if blender has those too.

Yeah I definitely prefer texturing, but I'm trying to get better at modelling too. Just keep practicing and it'll all make sense :p
