Now, I'm not sure if you are looking for any ideas, but I've got a few regarding to the winter level in your game.

The level would have three differently stylized areas: main area, small minigame areas and ice caves. The main area would be where the most travelling in the level would happen. It'd have heavy snowfall going on all the time, making it difficult to see far (visually short drawing distance). The music would be beautiful and emotional (similar to DKC2: In a Snow-Bound Land). The enemies appearing here would be mammoths and possibly other hostile ice age animals (like the giant short-faced bear), along with environmental dangers such as avalanches and hard-to-see cracks in the ground.

Another notable area (or areas) in the game would be the small minigame zones you can access by going to the borders of the level where the snowfall isn't so harsh (normal drawing distance). These areas would have happy winter music (similar to SM64: Cool, Cool Mountain), and enemies appearing here would be fairly harmless penguins. Friendly cavebunnies, European hares, can also be found here as NPCs. They either request Clive to find something or challenge him in several minigames. The player could also find villages and igloos to explore in these little zones.

The final area to be mentioned, the ice caves, would be the most dangerous one. Accompanied with a chilly, slow-paced and scary music (similar to DKC: Northern Hemisphere), these slippery caves would be filled with traps and dangers such as icicles falling every time Clive makes noise. And if that wasn't enough, it'd be easy to get lost in the maze-like cavern. A few minigame-hosting cavebunnies could also be found in these areas, all alone, giving you a chance to play more difficult challenges.

Some areas (mostly the caves) would contain underwater sections. Due to the cold climate, Clive could use HP instead of air while diving, perhaps?

I'm not expecting anything here to get into the final product, however I want to give you something to gain possible inspiration from.
