That aside, I think orange but with the new font might work well. Why not make it an option in the menu?
I'd vote for keeping it. Additional effects on the reflective surfaces might mitigate the problem, e.g. fogged or damaged mirrors.
Another possibility would be using autoaim for the hands (except for throwing things), which deals with both realism and ease of use.
If it's possible in source, maybe it would work better if there was an effect where objects glow faintly when you point the gravity hands at them if you can pick them up. (Maybe a different color if you can only push them.) I think a particle effect that surrounds the object would look even better, but that sounds like a lot more work.
I think the black and white might work better with a smoother grain effect, or no grain at all.
That's a shame, I liked the way they fit into the rest of the atmosphere...

I think you should try to reduce the number of times the player has to crawl through vents or stop to push a button because things like this break the flow of gameplay. Ideally, the player should be able to finish the map without stopping. Other than that it looks good.
Regarding UDK, I think the main thing you should consider is how much extra work it would mean to switch engines. I've seen several projects fall apart because the team decided to switch to a different engine without realizing the amount of time and effort that takes.
Judging from what you have said, you should switch to UDK.
