First I would like to say, as a big fan of Xwing and Tie-fighter, what you are doing looks fantastic.
Secondly, I would like to offer to help with development. I am a developer by trade, having worked in the industry for the last 8 years, mostly with mobile (iOS) but I have spent a few years working with Unity and c# for educational games on iOS.
I also have an oculus rift (both dk2 and cv01) and have worked in a professional capacity on VR experiences using unity for both the rift and vive.
