You do not start off with a companion.
Companions will wander into your safe zone by chance, when they do, click(or press Y ) on them while near them to recruit and take them with you.
After recruiting the companion, you will always be able to find them in the safe zone that contains the players home.
Companions will help you fight monters, protect your towns/safe zones from invasions and help you gather resources. Companions can also die on the battlefield, in which you'll need to find them again at your home to bring along again.
Companions level and get stronger as you take them on adventures, so be sure to do so!
