What are you running it with for it to be too performance intensive for you?
Either you're trying to run it on a toaster, or you're trying to run it with mods that are way too demanding.

That can quite easily be ignored.

There are options to make it look more like vanilla, most importantly, turning off texture filtering.
Apart from that, there are retro shaders you can find or you can use Vanilla Essence.
When it comes to gameplay, you can still play it the way you like. Sure, jumping, crouching, freelook and all those things are there, but you can turn them off, unbind them, or simply just not use them.
Sure, you may not find GZDoom to be the best source port of Doom, or even a good one, and that's okay. I respect that.
Different people like different flavors.
But I think a little fiddling can solve most of the gripes you have with it.

All the walls in E1M6 in Phobos Sector 2 need to be moved down a bit, doors are slightly ajar, wall lights are slightly too high, etc.
Map14 is a bit messy at the starting sector

Just some QoL ideas for a possible update
-Have Tab toggle automap. Having to use Esc to get out of the automap feels way too different for my muscle memory.
-People have made sprite rotations for BJ, why not put those to use in the automap. BJ always facing south is very disorienting and caused me to go in the wrong direction countless times after using the automap.
-Some kind of notification when the level is 100% complete
-Have a Enemy, Treasure, and Secret count in the automap or status bar.
