Enemies' stats do change during the night (higher exp rates, but stronger monsters). There are also some enemies that only appear during the night.
Regarding events, some side-quests are dependent on time, some expire, some are one-try only, and some are time insensitive. Main-quests are all time insensitive because it's impossible to predict at what time a player will arrive to a certain plot point. Travelling the game world at night.

Yeah, I agree about the readability of the roof sprites. This game has had a pretty long dev-time, and some things are itching for an update—those house graphics were made at least 7 years ago. I'll try to update them when I've got some time for it, thanks for letting me know!
