Not quite, they have some tiny differences when compared to their real life counterparts. Mostly are the same though with that bitching opaque canopy

There's some big differences in some aircraft. For example the Su-43, where the front portion of the fuselage meets the mid portion, it makes like a mushroom shape on the top side. You can see it in the intro video for AC3. The canards are also higher than the wings and bent downwards. The horizontal tail has rounded tips.
The F-16 has vents behind the canopy, plus "spiky" control surfaces. The middle of the fuselage is also narrower making kind of a wasp waist shape. And the canards.
The F-22 is longer and wider than the non-coffin version, plus it has a lot more grooves and curves.

I imagine it would be made to match the shape of the Su-43, but use a glass canopy. Like the way the MiG-29SM4 is the MiG-33SS with a glass canopy.

Looks like there is a bug with max speed. I cannot reach more than 1000 Km/H in horizontal flight. Not matter the altitude. Also, when you select qaam missiles your secondary weapon starts empty.

I just tested it again to make sure I didn't miss that, but no, here it easily reaches over 1000 kph in horizontal flight and the QAAM work perfectly fine. Are you sure you have VT up to date or didn't make any mistake during the installation of the plane?

Looks like it's more a mission-dependant issue. I think AC4 Sitting Duck mission has similar kind of issue from my experience.

One thing that does annoy me is the engine sound. If an NPC uses the Delphinus, the engine sound washes out all other sounds in the game and bugs them out, it's like really really ******* loud. On the plus side, it makes the SU-37 cannon sound extremely badass when completely distorted.

Yeah we have no idea why that happens. You can probably fix it by using some other plane's sound files.
