I guess wardogs would be used mainly to stun and overwhelm enemies rather than killing them.

Don't make the mistake to think wardogs as police dogs, that stick to your limbs. A dog that is not trained not to kill, will try to rip ouit your throat. Thus, somebody with low means of protection (armor for head, throat) could have a a very hard time.

Speaking of ripping throats, would dogs be able to rise from the dead and join the undead troops when they die.

The Wardogs are mainly in the game to chase and pin far away, fleeing or hidden enemies. The Battle Brothers are there for the actual killing. Although the dogs can do some pretty good damage to unarmored enemies.
